AIP Chicken Roulade - Paleo, GF, NF, DF, Eggless, TWP, GAPS, SCD

Get creative and make this AIP Baked Chicken Breast Roulade filled with avocado chutney! Once you make the chutney, spread it on pounded chicken breasts, roll them up, secure with toothpicks and they are ready for the oven! In the meantime, you can prepare side dishes and salads or put veggies with the roulades in the baking tray. Simple to make, easy for the belly and healing for the gut!

The recipe is so simple that there is no need for explaining much things. I was inspired by beef roulades and decided to try to make a chicken one... Actually, my oven is broken and, as I really wanted to try to make something like this, I had to opt for chicken because it does not require a lot of time to be done! ;) You can make a few bigger roulades or more smaller ones. I made 4 roulades - 2 big ones and 2 small ones - from 600 g of chicken breasts. If you are having guests, I recommend making few smaller ones. That way everyone can get a roulade and admire little spiral-shaped meat cuts on their plates.

I served this dish with fried white asparagus, mushroom sauce and green leafy veggies with broccoli. It was enough for 2 big meals - for dinner and for the lunch on the following day, for me and my darling.

Amount:
2 bigger and 2 smaller roulades,
enough for 2 persons for 2 big meals with side dish and salads of your choice

Ingredients:
600 g chicken breasts

~ for avocado chutney:1/2 ripe avocado*
4 TBS lemon juice
2 TBS water
3 TBS finelly chopped coriander
7-8 fresh curry leaves
10 salted black olives
pinch of turmeric
salt - only if olives not salty enough

*For low-FODMAP version of the recipe use less avocado and more herbs and olives.

How to..?
Pound the chicken breasts with a tenderizer. Flatten them as much as you can. Blend the chutney ingredients with a mixer in a cup or a jar. Take a spoon and spread the chutney evenly on the chicken breasts. Roll the meat gently and secure with toothpicks. Bake or roast in the oven. Serve while hot and top it with the chutney that was left.

Get creative by turning plain chicken breasts into an AIP Chicken Roulade suitable for the Wahls Protocol as well. Serve it with a lot of veggies and salad of your choice.
Extra Tips!
1° Marinate in salt, turmeric and a bit of lemon juice before spreading the chutney and baking. If you tolerate high-FODMAP ingredients like onion and garlic - add them!
2° People following low-FODMAP diet are encouraged to put less avocado and add more herbs and olives.
3°  If you do not have fresh coriander and curry, finelly chopped fresh parsley will do as well.
